Con’ Olio Oils & Vinegars brings Europe to Austin After a career working in corporate America, a honeymoon in Europe was enough to inspire founder and CEO of Con’ Olio Oils & Vinegars Tabatha Conarko and her late husband Je to start the oil and vinegar tasting bar in Austin in 2009. There are at least 65 tasting options for oil and vinegar in the shop.
What’s special about it? People come to the shop for the freshness of the oil and its health bene ts, Conarko said. Nutrition labels are posted on dispensers, including when the olives were crushed. This is important because olives lose nutritional value after 12-14 months, Conarko said. Additionally, sta guide customers through tastings and break down the di erences between varieties and nutritional information. The store also sells meats, cheeses, pasta, specialty wines, spices, seasonal imports from Europe for the holidays and more. “We want people to feel like they’ve stepped into a little shop in Europe,” Conarko said.
