They settled on Georgetown after exploring and getting to know the local community. “The reception that we’ve gotten has been stel- lar,” Sanchez said. “This is who we’re doing it for, and being a part of this community in Georgetown was such a huge one for us.” Looking ahead Being downtown, Sanchez said the team is look- ing forward to engaging in town events like the Lighting of the Square and the Red Poppy Festival. “It’s nice to be a part of a good group of other operators and part of a town that really cares about its people,” Sanchez said. “We’re excited to see where the future takes us.” Additionally, the Georgie’s menu changes quar- terly to highlight seasonal oerings. Currently, the restaurant is showcasing high-acid and lighter wines as well as a frozen Irish coee.

“[Stark] is really creative as far as sourcing and getting the best product that we can possible,” Sanchez said. In addition to seafood, Georgie’s also oers a selection of chicken, beef and vegetarian options. Other popular items include the hush puppies with hot honey and tarter sauce; fried green toma- toes with jalapeno ranch and crispy bacon; and the chicken and farro, which is made with roasted chicken thighs, true farro risotto, cauliower, pecans and a balsamic reduction. “Food wise, there is something for everyone and [Stark] built that with purpose and with intention,” Sanchez said. Meet the owners Along with Stark, Matt Luckie and Mike Farr make up the triple threat behind Georgie’s, bringing together years of experience in business management and ownership in the Austin area. Luckie owns and operates several local busi- nesses, including two Mean Eyed Cat locations in Austin and Driftwood, and Midnight Cowboy in downtown Austin. Meanwhile, Farr owns Round
