According to Do, the appearance of the soft-shell crab, which is cooked in its entirety, was too o-putting for some customers, so he expanded the menu to include more visually appealing items. “I’ve had customers tell me sometimes [the soft-shell crab] looks like a big spider,” Do said. “That will scare them, and they don’t want to eat it, so now I also have crab cakes and lobster cakes.” Do has also added beef options for customers who are not able to consume seafood, such as the beef kimchi fries. While Do said he has considered opening a brick-and-mortar loca- tion, he noted the appeal of owning and operating a food truck makes more sense for the time being. “A food truck is easier to man- age, and the money that you put in as an initial investment is way less than a restaurant,” he said. For now, Do said he is focused on building MMM Crab’s brand as a food truck, noting he plans to open a second location in New Caney when a planned food truck park opens on Hwy. 242 this September. “Everyone could start [a food truck],” he said. “If it works, you’re going to have freedom [and] not live paycheck to paycheck.”
Owner Gia Do opened MMM Crab in October in the FM 1960 Food Truck Park.
U.S. in March 2020, most restau- rants either shifted to oering takeout and delivery options only or shut down completely. Humble resident Gia Do, how- ever, saw an opportunity. “Restaurants started shutting down everywhere, so we started thinking about opening a food truck because people still need to be eat- ing,” Do said. “Plus, being outside was really good for people.” Thus, MMM Crab—located at the FM 1960 Food Truck Park in Humble—was born. Despite having no prior food industry experience, Do said MMM Crab quickly gained popularity after opening in October. The restaurant oers a mixture of Vietnamese cuisine and seafood staples ranging from egg rolls and fried rice to shrimp burgers and Vietnamese street food. MMM Crab’s most popular dish, however, is the soft-shell crab burger, which Do said is unique to the Greater Houston area. “I wanted to create something unique, so when people mention it, I’ll be the rst one to pop up in their minds,” he said.
Deliverydeals MMM Crab o ers several delivery options for customers who are unable to visit the food truck, including some special deals for those who order online. Deals are subject to change.
