BEYOND BREAKFAST Wae Love in Round Rock centers around a Belgian breakfast staple and also oers dishes for every meal of the day from lunch and dinner to snacks and dessert. 1 Chicken Avocado Tartine ($13.50): A croissant wae topped with seasoned grilled chicken, provolone, tomato, avo- cado, fried egg and Sammy sauce 2 The Dulce ($13.50): A churro wae topped with faux-fried ice cream, straw- berries, whipped cream and dulce de leche drizzle 3 Spicy Texan ($10.95): This specialty is oered only once a year and will return Jan. 10. It features a honey jalapeno cornbread wae and brisket chili topped with sour cream, avocados and cilantro.

Wae Love Restaurant serves Belgian breakfast item for every meal of the day O riginally from Utah, Katie Burton started working at Wae Love in 2016 after Burton said the business did well through the COVID-19 pandemic and drew many loyal customers.

Burton said Wae Love stands out because of the homestyle recipes, such as the customer favorite chicken and waes, served with a special sauce and maple syrup. “These aren’t your mama’s waes; these are authentic Belgian liege waes made from a yeast dough and rolled in pearl sugar,” Burton said. “They are crispy on the outside, and uy on the inside, so don’t expect your run-of-the-mill buttermilk wae when you come in and try us out.”

nishing college. The original Wae Love opened in 2013 in Utah as a food truck where Burton worked after growing tired of being in an oce. Burton became a store manager after just a few months and later got the opportunity to franchise Wae Love in any city she wanted. After researching areas to open a new Wae Love she settled on Austin. In 2017, she opened the Wae Love food truck that travels through- out the area. She opened a brick- and-mortar location in Round Rock in March 2020 and plans to continue to grow the brand in the area.

“It wasn’t an ideal time to open a restaurant, but we’ve rolled with the punches of COVID and ination over the years,” she said. Burton said her favorite thing about Wae Love is the sta that she works with. “I have an incredible sta, and we’ve cultivated a hardworking and positive environment. It truly makes all the dierence when you love coming to work and enjoy each other as a team,” Burton said. The Wae Love menu also features seasonal dishes that come out every year, she said. “I’m a sucker for the breakfast
