a range of ingredients, including cream cheese, jalapeno, avocado, honey wasabi and yellowtail. In the traditional stylings of Japanese sushi restaurants, there are very few tables at Yokoha- maya. With 13 total tables, patrons who are able to get a seat can enjoy the gourmet sushi in a smaller, more intimate setting. Yokohamaya also serves hibachi, ramen and noo- dle dishes, among other items, to oer something for everyone. However, the restaurant’s focus is on oering Japanese sushi. The other sushi chefs are trained by Fang so they can maintain quality, and he continues to work alongside them, preparing sushi dishes. Fang said working hard for his business and customers is what keeps him going. “We try to work hard for our own business,” he said. “I try to work harder for customers to like our food; that’s what makes us feel good and happy.”

cuisine to Cypress in 2017 alongside his wife, Bing Wang. He said the community has overwhelmingly supported him as he shares his passion. A sushi chef for 20 years, Fang got his start in Baton Rouge, Louisiana, before moving to Texas. The popularity of the Cypress location led to the opening of the second location last year in Tomball. “Customers make us who we are. If customers like my food, I’m so proud of that,” Fang said. Fang said many regular diners get creative and customize their own sushi rolls. He has even let regular customers name their own custom rolls and added them as specialty menu items. Sushi roll specials at the Cypress location include the Tracy, Grace, S and M, and NJ rolls, featuring
