Customers can nd a menu with varying Indian cuisine from naan tacos and curries to tandoori and biryani. The restaurant’s bar serves classic cocktails in addition to some items with an Indian twist, such as the Mango Lassi Rum, which features mango lassi and rum topped with pistachios. “I get to live my dream everyday,” Gil said.
Major Ajaypal Singh Gil learned how to cook in Pun- jab, India, where his mother taught him traditional cooking techniques. After exploring the culinary world through various chef experiences, Gil was inspired to open his own restaurant. A majority of the menu items at AustIndia Bar & Restaurant are inuenced by his childhood. “I always envisioned a fusion of authentic
