“Take our bacon—it’s Wright Bacon out of San Antonio and it’s cut on the thickest cut you can have,” he said. “So it’s all about the quality of the food and that kind of sets us apart.” The background Hippo Cafe started under previous owners Scott and Stacie Feller in 2019, taking over the former space of Hit the Spot Cafe. A year later, Leszynski, who has lived in Hutto with his wife and four sons for 19 years, joined the team and took full owner- ship of the cafe in 2024. “I was ready to semi-retire and be done, and I pretty much built this into something that ts my retirement perfectly,” he said. “So it’s more of a passion.”

Whether it’s for breakfast or lunch, the cafe has something for everybody. Customers will nd traditional breakfast options, such as eggs, bacon, waes and more. Additionally, the cafe serves salads, burgers, philly cheesesteaks and wings. In mid-January, specials included crepes, huevos rancheros, meatloaf and a white chocolate french toast. Owner Brian Leszcynski said he focuses on ensuring meals are made with the highest quality, locally sourced ingredients.
