After listening to customers, healthy choices, such as chia pudding, avocado toast, and gluten-free, vegan and vegetarian items were added. “We added south-of-the-border options like chillaquillis, huevos rancheros and breakfast enchila- das because my chef is Mexican,” Fadil said. “He said, ‘You’ll see, they will go like crazy!’ He was right, people love them.” Breakfast and lunch items are available all day, Fadil said. The couple said they enjoy their strong customer base and employee retention rate. “We treat [sta] like family,” Fadil said. “We recognize their good work and reward them. People need to be treated with respect; they are not numbers— they are humans.” Hope recalled the rst week they were open they had a higher turnout than expected and were understaed to handle the crowd. She said a customer wit- nessed her stress when she went outside to tell waiting customers the situation. “She brought me a card the next day,” Hope said. “She wrote, ‘It will get better. You’re doing your best. We’re here to support you.’ It brought tears to my eyes.”
