home-cooked food that you don’t have to spend six to seven hours preparing because we do it,” he said As he planned his own restaurant, he was inspired by how his grand- mother’s cooking brought people together, almost like magic, he said. “Food is a universal language,” Bozeman said. “It doesn’t matter your race, ethnic background, economic status.” The rst The Greasy Spoon location opened on the north side of Houston in February 2020, just before the COVID-19 pandemic. Another curveball awaited Bozeman that year; he was diagnosed with stage 3 cancer in June 2020. “That was a little more
challenging than COVID because COVID I could kind of control and be creative, but when it comes to a cancer diagnosis, it was like I was helpless,” Bozeman said. However, the Greater Hous- ton community, particularly in Pearland, came together to support Bozeman. After looking at the numbers to make sure the restau- rant would be viable, he opened The Greasy Spoon-Pearland on his birthday in January 2022. “I memorialized my birthday with still being here—being here for my family, my kids, my sta, my team and then also opening up a new location. It was like a new begin- ning,” Bozeman said.

only for his restaurants but for him personally through the pandemic and a battle with cancer. Bozeman grew up on the north side of Houston, working in his family’s restaurant on the week- ends. As he got older, he combined his passion for restaurants with his entrepreneurial skills, he said. In February 2020, he embarked on The Greasy Spoon project. The Greasy Spoon is a fast-casual soul food restaurant. Oxtails are the most popular item along with The Boss Seafood Stack, Bozeman said. “You can expect some great,
