“It was never so much about starting a business for the money,” Gerry Sandoval expressed. “It was to be in service ... and educate others on the health bene ts of acai [superfoods] that we experienced.” Respecting the craft A customer favorite is the original acai bowl. Other bowls are the pink pitaya bowl, pina colada bowl and chia pudding parfait. Anita Sandoval said everything is blended from scratch to remain as healthy as possible. What’s next The Sandovals recently added a second truck and said they’re working on adding Dubai choco- late-inspired items, juices and wellness shots.
What began as a way to provide a special diet for Anita Sandoval and Gerry Sandoval’s daughter has become a mission for the Sandovals to provide healthy super food options for their community. How it started In 2020, Anita and Gerry’s daughter Olivia was diagnosed with alopecia at 4 years old. As an alternative to frozen treats, Anita Sando- val said she practiced making her own acai bowls. With positive reception from family and friends, their food truck business came to fruition in 2022. The Sandovals said their family adopted a healthy lifestyle along with their daughter. They began to see Olivia’s health improve, inspiring them to share the health bene ts acai berries o er.
