Maple Street serves breakfast and lunch: comfort food with a twist and made from scratch, Quart said. Biscuits—with a touch of maple syrup—are made every 90 minutes. Most items on the menu have a touch of maple syrup involved, Quart said. The jams, jellies, apple butter and gravy for the biscuits are made daily by community leader Ash- lee Passini and her sta. This summer, the company added traditional biscuit sandwiches—called Retro Biscuits—to the menu. “You can go to a gas station and get a bacon, egg and cheese biscuit, but you are not going to get it on a fresh biscuit; you are not going to get it with pecan-smoked bacon and an egg however you want,” Quart said. “We feel this will allow us to reach more guests that don’t have time on the weekends to share with us.”

Ashlee Passini is the community leader at Maple Street Biscuit Co. in Keller.

Jay Quart, vice president of marketing and product strategy. Quart said Moore worked at a Winn-Dixie grocery store, and after he was laid o, he went into the restaurant business. “He wanted to have something unique, some- thing special, something that you have to come to Maple Street [Biscuit Co.] to get,” Quart said. Moore opened his rst Maple Street Biscuit Co. location in 2012 in Jacksonville, Florida, and now has locations in seven states. The foray into Texas happened in 2018 in Frisco, and in 2022, Keller became the second North Texas location, Quart said. The expansion continues with a location in Dallas that opened in July as well as future ones coming to McKinney, Wylie and Manseld.
