BUSINESS FEATURE Granzin’s Meat Market Shop keeps tradition of fresh, locally processed meats alive S ince opening in 1981, Granzin’s Meat Market has provided fresh meats and produce to New Braunfels. The business was founded by Tony and Sonna Granzin along with their three sons, Gary, Mark and Michael. Relocating to New Braunfels from Marion, the family provides a unique experience for patrons. Gary, Mark and Michael brought their experience from work- ing at Penshorn’s Meat Market in Marion. They began learning the trade as teenagers. The brothers would head to work after football practice. Gary worked at a larger meat packing plant after nishing high school, and his two brothers worked construction. When Granzin’s Meat Market opened, the three brothers came to Granzin’s Meat Market to run the business. Zane Granzin, co-owner and son of Gary, oversees the day-to- day operations. Zane said part of what makes Granzin’s stand out from other meat markets and grocery stores is the ability to provide the freshest meat possible through on-site slaughtering. “I would say probably, you know, 40%-50% of everything that we sell here, we slaughter here, we make here,” Zane said. Granzin’s Meat Market also oers custom slaughtering for cattle and processing for other game such as deer, lamb and hog. Game such as deer must be pre-gutted. Zane said people who bring in game to be processed will receive the meat they provided. “Some places they make batches where they just mix every- body’s stu,” Zane said. “But we keep everything separate. If you bring this deer in, you’re getting only your deer.” Zane said customer service is a top priority along with having fresh products made in-house. “I mean we’re a family business; we make all of our sausage and bacon, everything like that, we make it all in house; we make it like more of an old traditional way,” Zane said. “We try to wait on the customers like once the customers come in, and we try to wait on them as fast as possible.” In addition to its fresh choices of beef, pork, poultry and seafood, Granzin’s Meat Market also runs a small fresh produce, dairy and dry grocery section. The shop also sells a selection of beer and wine. Zane said the shop plans to open a new location sometime next year near Canyon Lake. BY CHRISTOPHER GREEN

In addition to serving as a retail butcher shop, Granzin’s Market also provides processing services for hunters and ranchers, including:
cattle slaughtering and processing; deer, hog and lamb processing; processing for game brought in by customers (must be pre-gutted); and a full deli.
All of the retail meat in the shop is butchered fresh daily in house.
Fans constantly blow over the dry sausage as it cures before being ready to sell.
