Townhouse Brunch oers fresh food in Colleyville

When owner Sam Pisike took ownership of Townhouse Brunch in Colleyville, he didn’t want to change anything about what made the diner special. “I had been visiting on and o here [because] I know [the previous owner],” he said. “I like the location. I like the Colleyville people around here.” Pisike has owned Townhouse Brunch for more than a year and the diner opened under its rst owner in 2018, he said. What’s on the menu Popular menu items include the Townhouse breakfast, which has eggs cooked to preference, a choice of meat, such as ham, bacon, sausage, chicken apple sausage, turkey bacon, or turkey sausage, or a vegetarian version of the meal with vegetables or tofu, Pisike said. “Everything is freshly made and I love that when you bring fresh food onto the table; this is what you really should be eating rather than eating precooked,” Pisike said. Other classics include the eggs Benedict, which has an English mun, Canadian bacon, poached eggs, and a French sauce, hollandaise, according to the diner’s website. Visitors can also enjoy mimosas and lattes,

including the marshmallow and Tiramisu latte, he said. Townhouse Brunch also has seasonal specials, including sh tacos, Pisike said. What makes it special? Pisike highlights that the sta is one of the reasons he wanted to add Townhouse Brunch to his portfolio. “The servers are so good and they’ve been working for so many years,” he said. “They know all the customers very well and they take care of the customers. They know what the customers order and they always suggest something dier- ent. It’s a more family oriented conversation that they have.” The sta also works together to create special menu items during the dierent seasons, he said. Looking ahead Pisike plans to maintain the quality of food and customer service within Townhouse Brunch and isn’t planning on changing anything about the cafe, he said. “As long as people love you, they keep coming [back],” Pisike said.

The Bacon Burger ($17.50) includes American cheese, bacon, mixed greens, tomato, mayo, and pickles.
