In 2021, they held a grand opening for Hilltop Grill Shop, which sells grills, charcoal, wood chips, seasonings, sauces, meat and more. “We have everything to cook on and anything you need to cook, and products to cook, like sausage and steaks,” Trouper said. However, if they are not in the mood to grill, customers can also place an order for sushi made by Sushi Dojo in the on-site commercial kitchen. Other local chefs use the ghost kitchen to ll online orders for desserts, baked potatoes and more. The family has converted the upstairs area of the main build- ing into a rentable loft, which they call the Cowboy Condo.

Hilltop TX, a multifaceted business operation, was estab- lished in 2018 and is owned and operated by Trace, Robin, Trouper and Tanner Arnold. However, their family business history stretches back much farther. Trouper said 30 years ago his parents built the busi- ness’ main building to serve as a place to store dry items they used for their customized 18-wheeler meat smoker. “We took it

We’re the irst people they get to engage with.” They plan on opening a food truck court as well as building 52 insulated garages and possibly opening an RV park, Trouper said. Trouper said working with his family is one of his favorite things about co-owning this business. “Working with my family has shown me over time you might not get the instant reward of working really hard, but it’s for the big picture,” he said. “We know what we want from this, and we are willing to commit a lot of time and eort into it.”
Although the 18-wheeler is retired, the family business is still rolling. Under the direction of Trouper and his mother, Robin, the family built 350 spaces for RV and boat storage, and con- verted the facility into o ces for Hilltop Storage Solutions, which opened in 2018. “We have uncovered, cov- ered [spaces] and some with electrical if you want to plug in,” Trouper said. “[The year] 2020 was the boom for RVs. In 2019 we signed up 45 people, and in 2020 we signed up 200.” With their vast grilling experience, the family decided they should also sell grills.
