As the third owners of Zin Zen Wine Bistro in McKinney’s Adriatica Village, Randy and Regina Reed were longtime patrons before purchasing the establishment in 2015—which they said gave them irsthand insight into the value of preserv- ing what guests already cherished. “What we heard a lot from customers was, “You’re not going to change the ambiance. You’re not going to change the menu.” So we’ve tried to keep what Zin Zen has always been about,” Regina Reed said. “Even when we had a flood two years ago and had to throw out the furniture, customers said “You’re going to get couches, right?” I said, ‘Yes, I’m going to take care of you.’” The original owners of Zin Zen Wine Bistro, Luetta Probst and Lori Hagman, opened the business in 2006. Kaleb Moore and Michael Dooley were the second business owners. On the menu Regina Reed said their food menu features many shareable dishes including flatbreads and customizable meat and cheese boards. “We do a DIY meat and cheese board where you get kind of like a sushi slip and you pick your meats, cheeses and sides,” she said. Board options include honey-smoked salmon,
