Annequin said Paulette Cafe is famous for its croque madame, a warm sandwich made with Texas toast, ham, melted cheese and an egg. “People love it, some people only come for the croque madame,” she said. “They try it once and are hooked.” Going forward, Annequin said Paulette Cafe will soon be oering onsite catering and plans to expand with a new location within the next six to eight months.

“Some of Paulette Cafe’s recipes were my moth- er’s recipes,” Annequin said. “We oer French cuisine made the French way, from scratch with fresh ingredients, not frozen.” The inspiration Annequin’s business venture began in 1999 in France where she owned three restaurants with dierent concepts including an evening entertain- ment restaurant and a pastry shop. After visiting Downtown Conroe, Annequin decided it was the ideal place for her next restaurant. At Paulette Cafe, Annequin said customers
