Libby’s Lunchbox has donated free meals to teachers and Broussard said she wants to continue giving back by fundraising for women and children’s shelters, and preparing Thanksgiving dinner for homeless people. Broussard said she hopes to one day have a chain of restaurants, and will be working to establish her rst brick-and-mortar. She said this could happen within the next year, and is eyeing locations in Cedar Park and Leander. She also hopes to get a trailer for event catering. “We’re looking forward to serving [our customers],” Broussard said. “We’re new, we’re here and we want to feed [the community].”

open a food truck presented itself, she established Libby’s Lunchbox in the parking lot of Toyota of Cedar Park in November 2022. “It’s just a way for me to share my favorite meals and my favorite recipes with people,” Broussard said. “I love food, and I love people, and it’s a way to bring the two together through the restaurant.” Broussard’s husband, Shane Brous- sard, works at Toyota of Cedar Park, and she originally started cooking for the employees. She said she wanted to continue to serve the employees as well as the broader community,

One of the most popular menu items at the food truck is the build-your-own burger, which allows customers to choose from a long list of toppings. Broussard said she tries to live out the restaurant’s slogan, “Food is our love language.” “I want people to sit down and eat and be lled with joy, because that’s what food can do,” she said. Broussard said the food truck is starting to get traction as people
