With their savings, family support, a degree in nance and deep roots in the service industry, Edson Marquez and Eduardo Mares were able to bring their years of planning this restaurant to fruition in late April. Instead of relying on the classic taco, Mar- quez said they wanted to focus on another item that is popular and representative of Mexico; thus, N’Chiladas was born, and they worked to create a brand surrounding that dish. “We wanted something with a drive-thru, something that you can call ‘fast’ but is still made from scratch,” Marquez said. The team is up at 6 a.m. each morning, cook- ing and preparing for the day to ensure that all the food is as fresh as possible. They also work with as many local vendors as possible to have locally made products and ingredients.

The N’Chiladas menu is simple but expansive with breakfast tacos, dishes in a host of proteins and sauces, soups and more. Over the months, the team has also taken feedback from customers and tweaked the menu to t in some Texas twists. An addition they have made to the menu is the Kyle Plate that comes with cheese enchiladas; rice; beans; and a crispy taco, which is not a widely common food item in Mexico. The duo also sell popsicles that are family-made in an array of avors from classic strawberry and coconut to more authentic Mexican avors such as tamarindo and cajeta, similar to dulce de leche. With time, they hope to expand upon their con- cept and provide more to the community, Mares said, with an outdoor patio, beer and liquor, live music and more.
