Unicorniverse Bakery and Cafe creates vegan ‘palace’ in Round Rock Since July 2023, Hunter and Evelina Sexton have shared their love for European-style and tasty vegan options with the Round Rock community. Their business, Unicorniverse Bakery and Cafe, provides a full menu of plant-based entrees and baked goods for customers to enjoy in an upscale atmosphere.

The backstory The pair’s business idea came when Hunter’s culinary skills blossomed during the start of the COVID-19 outbreak. “We were at home and we couldn’t nd vegan macarons anywhere around Austin,” Hunter said. “So we decided to try to make them and had a lot of trial and error. It was probably about eight or nine months before they actually came out looking like macarons.” The couple began selling the macarons at pop-up markets shortly after. The baked goods were a hit with the community and led to the opening of the business.

On the menu Hunter said in his 14 years of being vegan, he’s struggled to nd food options in the Round Rock area. He said the bakery helps ll that hole in the community. “One of the main things we oer are plant-based options in Round Rock, because there aren’t a lot of them around here,” Hunter said. The bakery’s menu features a wide range of cuisine from latte specials and omelets to sand- wiches and salads. “We wanted to try to make things so you can’t really tell they’re plant-based, so people can enjoy whether they’re vegan or not,” Hunter said.
