Dos Gatos Kolache Bakery debuts in New Braunfels Wanting to spread Czech cuisine with Texas air in Central Texas, Dos Gatos Kolache Bakery Co-Owner Chase Katz said he had been eyeing an expansion for the past couple of years. Now, the San Marcos-based kolache bakery has a third location.

Owner Chase Katz, along with his brother, Seth, opened Dos Gatos Kolache Bakery in San Marcos in 2009.

The New Braunfels location has kept the same menu as its sister locations in San Marcos—but it has an entirely dierent layout. Aiming for fast service and quality product, Katz said the new spot features a drive-thru and walk-up window. “We’re trying to make this a quick daily option for people,” Katz said. On the menu Katz said the bakery serves classic, sweet Czech-style kolaches along with savory Texas options lled with meats and cheeses. Additional meat options include Polish sausage, ham and bacon. Fruits like raspberries and strawberries top o the sweet kolache roundup, Katz said.

“This will be your favorite local coee shop,” Katz said. “There’s so much to love about being here in New Braunfels.” Staying local Dos Gatos opened its rst location in San Marcos in 2009. Katz said the concept aimed to ll a specic niche in the region. “I felt something like this was missing in the area,” he said.
