Water 2 Wine Buda o ers winemaking experience At Water 2 Wine Buda, guests can enjoy a glass or bottle of the wine made on-site, or become a vintner and create a from-scratch batch. Meet the owner While some people’s art form is painting or writing, owner Dane Aziz said his is cooking and winemaking. Aziz is a U.S. Air Force veteran and spent 18 years in the semiconductor industry. “The Buda Mill and Grain was just the perfect spot for Water 2 Wine [with] the high vaulted ceil- ing it just had that really classic farmhouse look and it just makes for a great winery,” Aziz said. fermentation bucket with water and adding ben- tonite, an additive to clarify the wine, and must, the crushed grape juice. Next, oaks are added to alter the avor and color, and yeast to convert the sugars into alcohol. From there, winemakers will put the barrel through fermentation, stabilization and ltration. In 6-8 weeks, the wine will be ready for bottling.
“I like chemistry, I like numbers, I like cooking,” Aziz said. “To me making wine is a lot like experi- mentation ... it’s science.” He learned the ins and outs of winemaking from the Water 2 Wine New Braunfels vintner before opening of Water 2 Wine Buda in 2020.
