Williamson County Bagel Company knows bagels When Alexandra Lawson moved to Texas in 2021, she knew she wanted to start a business, and she saw a need for quality bagels. After two years of recipe development with her She said her process recreates the taste, feel, smell and look of New York bagels. “Our bagels are amazing,” she said. “I stand by my product.”
Alexandra Lawson, co-owner of The Williamson County Bagel Company, said she grew up enjoying bagels.
“A true bagel is boiled. That’s the key,” Lawson said, explaining that they proof their bagels, then boil and bake them. What else? Standout bagels at the shop include The Brunch, comprising avocado, grilled onions, bacon, scram- bled eggs and butter on an onion bagel, and The Alex, which comes on an everything bagel with plain cream cheese, gravlox, tomato, cucumber, capers, onion, lemon, salt, pepper and olive oil.
husband and her sibling, Lawson found a recipe that created the crispy exterior she was looking for while maintaining a soft and chewy interior. That led to Lawson and her husband opening The Williamson County Bagel Company as co-owners in August 2024.
