DINING FEATURE Gregory’s Gyro and Rotisserie League City restaurant gives Greek cuisine a Texas twist G regory and Lizbeth Kavadias have devoted the past ve years to serving League City healthier meals in the form of Greek cuisine. Gregory’s connection to food begins with his Greek father, who opened a restaurant in Washing- ton, D.C. Gregory worked in restaurants into his 20s before becoming a pharmacist. After moving to Hawaii and having children, the Kavadiases were drawn to Texas. The Kavadiases opened Gregory’s Gyro and Rotisserie on May 5, 2018. Lizbeth stayed home to raise their children and later joined Gregory in running the restaurant, which serves Greek cuisine with a Texas twist. “The idea was I spend all this time trying to cure ... people [as a pharmacist],” Gregory said. “Why treat people after they’re sick when it seems like everything they’re eating is making them sick?” The restaurant combines cuisine from Gregory’s Greek heritage with Lizbeth’s South American background, which emphasizes home-cooked meals. Greek cuisine oers customers a healthy meal choice, Gregory said. “We don’t have a microwave. There’s nothing I make and keep warm trying to sell,” Gregory said. The gyro meat cooks on a rotisserie, allowing grease and oil to fall from the meat, making it a healthier option than fried meats, Gregory said. The couple even adapted to the local cuisine and introduced a fajita-style gyro, which Gregory said his father took some time to approve. Lizbeth’s Chinese heritage is reected in their Greek wonton with halal beef and jalapenos inside a wrapper. They frequently adjust meals to accom- modate customers’ preferences. “It’s kind of tailored, just like your own prescrip- tion of food,” Gregory said. BY RENEE FARMER
