been given a second chance and a fresh appeal after new owner Bob Wilson stepped up to revitalize the popular restaurant. Wilson, who also owns Billy’s Ice in New Braunfels, said once he heard Adobe Verde closed and was for sale in December, he worked to purchase the restaurant and had a deal drawn up in just nine days. “[Adobe Verde] was just such a staple of New Braunfels and Gruene, and I’d seen it had been declining over the last few years, and it made me sad like I think a lot of people. And then when I had a

room improvements; and more. “[Customers] can expect they’re gonna get great service,” Wilson said. “They’re going to be in a clean and safe environment with deli- cious food. And it’s going to be a fun time; it’s going to be a party.” Wilson said more than 1,400 customers came opening weekend. “The feedback and the following have just been superb. It’s more than we anticipated. … Hopefully [Adobe Verde] is still their favorite place to come eat in Gruene,” Wilson said.
