Abuelita’s Bakery Spot began as a cottage baking venture in December 2020 during the COVID-19 pandemic. In September of 2021, the at-home bakery opened a food truck before moving into its current brick-and-mortar space at the Kyle Windmill Center in June 2022. Part of the bakery’s branding is “valley style,” because the owners are originally from Edinburg, located in the Rio Grande Valley region, and wanted to bring “valley style” to Kyle. “When we moved over here, we were like,
